Salted eggs recipe, the simplest thing to do

Salted eggs is one of the simplest thing to do. One way is to keep them for long time for when you will need it, and another way to create new food.

Egg can never make into main dish. It is always side dishes in Cambodia but we have found about 40 ways of eating eggs! Salted eggs can also turn into about 10 different meal. 


Here, they do business with egg, because the amount of consumption by locals are so high! There are so many big farms to collect eggs. 

You can note that if the internal of egg are white, they are raised in the farm where ducks are feed with fish. If the internal of the eggs are yellow, or dark yellow, they are free range duck raised naturally as they eat rice from the paddy field.

How to make salted eggs

  • Ingredients: 35 eggs, 0.4kg of salt, 1 tbs of brown sugar, 5 pieces of kaffir lime leaves, 5 pieces of lemongrass (some people add pandan leaves to make eggs more fragrant!
  • How to make: Clean egg, then arrange them in the jar. Boil 2liters of water, pour the boiled water into the iron pot which you already put salt, sugar, kaffir limes and lemongrass in. Wait until it is cold, pour them into the jar of eggs.
  • Keep them for 10days, then take the eggs out of the water. 
  • Then keep the eggs in the fridge, it won't be spoiled. You can use them to make into different dish until no more!
